You Ling Ji -Fried Chicken with Sesame Oil Dip

Just try this! It's very good.




Ready in: 10 minutes

Ingredients for two:
2 chicken breasts
Salt and pepper
1 tablespoon of sake or white wine
1/4 of corn starch
1/4 to 1/2 of frying oil
[Prepare in a bowl]
1 green onion, minced
1/2 garlic cloves, minced
1 teaspoons of minced ginger
1 tablespoon of soy sauce
1 tablespoon of white wine vinegar
1 tablespoon of sugar
2 teaspoons of sesame oil
1 teaspoon of sake or white wine
1 teaspoon of honey or maple syrup
Chili powder, optional

Step 1: Prepare sauce. If you have time, leave it for 30 minutes.

Step 2:  Put salt, pepper and sake on chicken breasts.

Step 3:  Coat them with corn starch.

Step 4: Fry them, make them crunchy.

Kani Tama- Chinese Omelet in Gravy

Fluffy omelet in a vinegar gravy.

Ready in: 10 minutes

Ingredients for two:
2 eggs
2 button mushrooms
2 crab meat sticks
Chopped green onions
Some sesame oil
<Gravy, Prepare and heat up in a pan>
1 tablespoon of chicken stock powder
1 cup of water
1 teaspoon of soy sauce
1 tablespoon of cornstarch
2 teaspoons of white vinegar

Step 1: Cook mushrooms, crab meat, and green onions in a pan with sesame oil. Pour beaten eggs into it. Eggs should be running inside.


Step 2: Pour gravy on top.

Ban Ban Ji- Chicken Salad with Sesame Dressing

Cold salad is the way to go in the hot summer!


Ready in: 15 minutes

Ingredients for two:
1 chicken breast
2 tablespoons of sake to pour when steaming the chicken 
2 mini cucumbers
1 tomato
Some shaved green onions, bottom part
<Prepare in a bowl>
2 teaspoons of white miso
1/2 tablespoons of soy sauce
1 tablespoon of mirin
1/2 tablespoons of sugar
1/2 teaspoons of sesame oil
2 tablespoons of white sesami seeds, grounded
1/2 teaspoons of ginger, grounded


Step 1: Pour sake on top of chicken brest, and steam or boil it for 10 minutes. Cool it down, and shred it.
  
Step 2:  Cut vegetables into stripes, and place them on a plate with chicken.

Step 3: Mix the dressing well, and pour it onto the salad.

 







Cham Pon- Stair Fry on Noodle Soup (Ramen)

Do you like Ramen? What kind of Ramen do you like?

If your answer starts with a name of a city, yes, you do like Ramen.

My father is from a southern island in Japan, where poeple have serious passion about Ramen. In the island, there are streets with lines of noodle stands and people make lineups. The city is called Fukuoka, and there is a small part of downtown that people call Hakata. That's the Hakata Ramen (tonkotu pork soup stock) heven! In Fukuoka, there are also some diffrent types of Ramens, that contain soy sauce or fish stock in the soup along with tonkotsu. We don't call these Hakata Ramen. Hakata Ramen has a specific style in the soup; uses super thin and al-dente straight noodles, julienne red ginger and black fungus and a piece of seaweed paper and piece of pork belly on top of the bowl, sprinkled chopped green onions and white sesame seeds at the end. You may add cooked chili fravour mustard leaves, but nothing eles.

Chan Pon is one of famous noodles from a southern part of Japan. It's different from Ramen. It's often called Nagasaki Chan Pon. Nagasaki is a city beside Fukuoka.

Raised by a man who is very serious about good noodle soup, I think I do carry his passion.


Ready in: 15 minutes

Ingredients for two:
2 portions of Chinese egg noodles
Some sesame oil
Some mushrooms
1 carrot
1/2 onion
4 cabbage leaves
1 hand full of bean sprouts
1 hand full of garlic chives
Some snow peas
Some salt and pepper
<Prepare in a pan>
375ml of water
150ml of milk/soy milk/almond milk
1/2 teaspoons of worcestershire sauce
1/2 tablespoons of soy sauce
1/2 tablespoons of chicken soup



Step 1: Cut vegetables and cook them with sesame oil.


Step 2: Heat up the soup



Step 3: Cook noodles

Step 4: Put noodles in a bowl, put vegetables on top of it, and pour the soup.

Add salt and papper on top

Happou Sai- Chop Suey with Seafood and/or Pork in Soy Sauce Gravy

When I feel like I need alot of vegetables, I cook this dish.
You can eat it with rice or fried noodles. 


Ready in: 25 minutes

Ingredients for two:
5 large leaves of Nappa cabbage
5" of carrots, shredded
1/2 cups of snow peas
1/2 cups of mixed seafood
3 shitake mushrooms
1 cup of bean sprouts
Some green onions
Some boiled quail eggs
Some sliced pork, optional
1/2 cups of bamboo shoots, optional
1/4 cups of dried black fungas, optional- soften in water in advance
Soup
1 cup of water
1 tablespoon of chicken stock powder
2 tablespoons of soy sauce
Gravy
1/4 cups of water
1 tablespoon of corn starch


Step 1: Prepare all the ingredients.

Step 2: In a pan, start cooking hard vegetables.

Step 3: Cook everything together, and mix it well. Add the soup, and cook for 5 minutes. Add starch mixture and cook for 2 minutes.



If you want to eat it with noodles, soften egg noodles in boiling water and fry them in a pan with 5 tablespoons of oil.
 Make sure the noodles are nice and crunchy.

Chimaki- Steamed Sticky Rice with Meat and Veggies


My mother was on mission of making home-made food and dessert 365 days a year when I grew up. She has made anything by herslef; juice, pizzas, birthday cake, ice cream, anything you can think of. 

There are many food that I missed from her. Chimaki rice is one of my favorite.

After both her children left home, my mother opened a cooking class and still enjoys home-made cooking. 

She has never taught me how to cook. We've never stood in the kitchen together. However, I remember seeing things what she did in the kitchen, and oddly enough I know what to do to make her taste.

This rice taste good even eating it cold.



Ready in: 30 minutes

Ingredients for four:
2 cups of sweet rice
1/2 cups of dried mushrooms- dilute the mushroom water to 2 cups
1/2 cups of minced chicken or pork, if you want
1 cup of vegetables, such as green beans, carrots, or bamboo shoots 
2 tablespoons of sake
2 tablespoons of soy sauce
2 tablespoons of sesame oil for frying
2 cups of  mushroom water

Equipment:
Foil or leaves to wrap
Steamer

Step 1: Soak dried mushrooms in water and mice them. Do NOT throw out the water!!


Step 2: Mince your meat and vegetables, and cook eveything with sesame oil in a frying pan.


Step 3: Wash rice, and put in the pan. Mix everything.

Step 4: Put mushroom water, sake and soy sauce, and cook untill water disappears.

Rice should look still white, and uncooked.
Step 5: Place some in foil and wrap it in a shape you like.




Step 6: Steam the wraps for 20 -30 minutes.
Put the lid on!

Harumaki- Non- Deep Fried Spring Roll

Deep fried sprin rolls are nice and crunchy, but this non-deep fried recipe must feel you good eating "healthy"!


Ready in: 50 minutes, including 30 minutes in oven

Ingredients for 10 rolls:
1/2 carrot- cut into 1" strip
Hand-full of dried mushrooms
Some bambooshoots, if you can find
100g of ground pork, if you want
1 cup of cooked vermicelli
Hand-full of chives
Any other vegetables
Seasonings
3 tablespoons of oyster sauce
2 tablespoons of soy sauce
2 tablespoons of sake
Salt and pepper
1 teaspoon of minced ginger
Sesame oil to fry everything
Paper
10 spring roll paper
Cornstarch + water as a glue
<Serving with>
Sweet chili sauce
or
1 tabespoon of ketchap
3 tablespoons of vinegar
2 tablespoons of sugar

*Prepare your oven for 400F.
*Soak dried mushrooms in water for 30 minutes.
Step 1: Cook vegetables in a pan, and season them.
I use 2 different types of dried mushrooms
Step 2: Make a roll.
Roll it just like a burrito

Make a mixture of water and cornstarch, and use it as a glue

Step 3: Place them on a oven pan, and brush oil on top of them. Cook them for 30 minutes.

Hiyashi Chuka- Cold Ramen Noodle Salad


Everyone must have the experience of craving some kind of food. All the sudden, I really wanted these noodles! It’s funny because it’s not summer yet (this is a summer dish), and not even my favourite food.

However, it turned out well!
 

Ready in: 15 minutes

Ingredients for two:

400 g of Chinese egg noodles
Cucumber
Tomato
Salad
1 hard-boiled egg
Cold cut
Some sesame seeds

<Dressing- prepare in a shaker>
25cc of water
50cc of vinegar
2 tablespoons of soy sauce
1 tablespoon of sesame oil
1 tablespoon of lemon juice
1/2 tablespoons of sugar
A pinch of salt

Step 1: Cook noodles by following the instruction on the package.
Step 2: Place them on a plate.

Step 3: All the vegetables and meat on top.
Put the dressing on top
