Fruits Tart Tatin

Lately, I enjoy baking a lot.


Ready in: 90 minutes

Ingredients for 1 whole:
[Fruits]
2 apples or pears, slice finely
20g sugar to cook fruits
30g sugar to make caramel
20g of butter to cook fruits

[Cake]
80g of sugar
30g of butter
60g of coconut oil
2 eggs, separate yolk and white

[Prepare in a shifter]
80g of flour, 100g if you don't use almond flour
20g of almond flour or powder
3g of baking powder, only if you are not sure about your meringue

Required Equipment:
Flour shifter
Hand mixer
Cake mold

Step 1: Put 30g sugar in a pan and heat up till it becomes caramel


Step 2: Once the caramel gets brown, add 20g butter and mix

Step 3: Add sliced fruits in the caramel and mix well. Add  25g sugar by dividing 3 times. Cook it until all the juice disappears.



Step 4: Set the oven at 350F

Step 5: Place cooked fruits in a cake mold

Step 6: Make meringue

Step 7: Pour hot water in a bowl, and place the bowl of butter and coconut oil to melt. Once it melt, add sugar and egg yolk. Mix it well. 

Step 8: Add dry ingredients and mix it well


Step 9: Add  meringue and mix gently

Step 10: Pour the batter onto the fruits and bake it for 40 minutes


Step 11: Flip it over onto a plate

Kasutera (Castella) - Fluffy Honey Sponge Cake

Kasutera is a classic Japanese dessert from Nagasaki in Southern Island. It has a very simple taste, but is very delicious. Try to eat it next day. It becomes very moist!

Ready in: 45 minutes

Ingredients:
2 eggs
3 tablespoons of sugar for egg white
2 tablespoons of sugar for egg yolk
5 tablespoons of flour, shifted
2 tablespoons of honey

Required Equipment:
Non-metal poundcake mold


Step 1: Preheat the oven at 350F.

Step 2:  Separate egg yolks and egg white in bowls, add sugar in each bowl. Start whipping from egg white and then egg yolk.
<Important> Bowls have to be dry in order to make hard meringue.



Whip it till yolk becomes creamy.

Step 3:  Add honey in yolk and whip it.

Step 4: Add flour in yolk and mix it.

Step 5: Add egg white into yolk, and mix it lightly.

Step 6: Pour it into the mold and remove the air by dropping the mold a couple of times. 

Step 7: Bake it at 350F for 10 minutes, and lower the temperature to 300F for 15-20 minutes. 

Step 8: Wrap it in plastic to keep moist and leave it overnight.

Omu Laisu- Ketchup Chicken Rice Wrapped in Omelette

This was my least favorite food from mom's kitchen when I was growing up. However, I always enjoyed mom's ketchup drawing on the omelette.


Ready in: 20 minutes

Ingredients for two:
1/4 onions, chopped
A handful carrots, mushrooms and green beans, chopped
1/2 cups chicken, diced
1 cup of cooked rice
Salt and pepper
1 teaspoon of chicken stock powder
3 tablespoons of ketchup
Butter to make omelettes
2 eggs each omelet


Step 1: Cook vegetables and chicken


Step 2: Add rice and mix it well


Step 3: Season it and mix well


Step 4: Put 2 eggs in a bowl, beaten them and add 1 tablespoon of cold water

Step 5: In a pan, put butter and make a thin omelette. Cook only one side.


Step 6: While the omelette surface is still wet, add mixed rice in the middle

Step 7: Slide it to the edge of the pan, and wrap the rice

Step 8: Place it on a plate and decorate on top of the omu-rice

Gratan- Macaroni Gratin

I hate the smell of cheese. I don't eat pizzas, any salad that contains any types of cheese, or anything that may contains cheese. I just cannot stand the smell of it. 

But.... I love my gratin with a thin layer of cheese. It gives a crunchy texture.


Ready in: 30 minutes

Ingredients for one baking pan:
2 cups of uncooked macaroni
Any vegetables, onions, mushrooms, carrots, broccoli, peppers, corn
One chicken breast, cubes
One garlic clove, minced
1/4 cups of flour
1/4 cups of milk
1/4 cups of water
1 tablespoon of chicken stock powder
1/4 cups of cheese
1/4 cups of panko bread crumbles
Salt and papper
Few slices of bacon, optional

Required Equipment:
Oven
1 baking pan

Step 1: Cook macaroni.

Step 2: In the pan, put some oil (or bacon), and cook onions and garlic first. Cook all vegetables. Add chicken.

Step 3: Add cooked macaroni into the vegetable mix.

Step 4: Add flour and mix well.

Step 5: Add milk, water, chicken stock powder, and season it.

Step 6: Put it in a baking pan. For cheese lovers, you may want to layer it with cheese.

Step 7: Put cheese on top.

Step 8: Put panko on top.

Step 9: Put it in 350F oven for 10-20 minutes, and broil for 3 minutes.
