バッファローチキン(ピリ辛手羽先)- Buffalo Wings

カナダで人気のパブ料理。1パウンド(5本くらい、450g)とか2パウンドとかで注文するんだよー。味も色々あるけど、家で作るならバッファローチキンが美味しいと思う。

スポーツ観戦のお供にどうぞ!



食べるまでにかかる時間:2時間

2人分の材料:
手羽先20本(4パウンド=2キロくらい)
[粉、カップに準備する]
溶かしバター大さじ2
タバスコ大さじ2
酢大さじ2
ウスターソース小さじ2
[ソース、蓋付容器に準備する]
小麦粉50g
チリパウダー(唐辛子)適量
ガーリックパウダー小さじ1/2
塩2振りくらい

必要な調理器具:
オーブン
鉄板
ボウル2つ

手順1)粉物を混ぜる。蓋付容器に粉と手羽先を入れて、蓋をして振って、手羽先に粉をまぶす。粉をまぶした手羽先を冷蔵庫で1時間ほど寝かせる。


手順2)冷蔵庫から手羽先を取り出す。

手順3)オーブンを200度にセットし、予熱を始める。

手順4)ソースを作り、手羽先を入れてソースをコーティングする。


手順5)鉄板に手羽先を並べて、オーブンに入れる。25分たったら手羽先を一つずつひっくり返す。ソースが余ってたら、もう一回コーティングするとさらに美味しくなる。もう一度オーブンに戻してさらに20分焼く。

手順6)焦げ目がつくくらいカリカリになったら出来上がり。

Singapore Chicken Rice

My English teacher was a Singaporean when I was in school. She invited me to visit her when she left Japan. It was my first time for me to leave my country.

Singapore showed me multiculturalism, joy of food at Hawker Centres, and how "English as a second or third language" can open many doors.


The taste of Singapore chicken rice is the taste of my first adventure.


Ready in: 50 minutes with using a rice cooker

Ingredients for two:
[Prepare in a pot]
1 cup of uncooked rice
2 teaspoons of chicken stock powder
1 teaspoon of coconut oil

Some coriander and roasted peanuts to garnish

[Prepare in a ziplock]
2 chicken breasts
1 teaspoon of salt
1 tablespoon of Sake
1 tablespoon of minced ginger
one green onion
[Prepare in a cup for sauce]
2 tablespoon of soy sauce
1 tablespoon of minced ginger
1/2 teaspoon of sugar
1 teaspoon of sesame oil


Step 1: Prepare ingredients

Marinate for 15 minutes

Step 2: Empty the ziplock in the rice pot and start cooking

Step 3: Enjoy!

You Ling Ji -Fried Chicken with Sesame Oil Dip

Just try this! It's very good.




Ready in: 10 minutes

Ingredients for two:
2 chicken breasts
Salt and pepper
1 tablespoon of sake or white wine
1/4 of corn starch
1/4 to 1/2 of frying oil
[Prepare in a bowl]
1 green onion, minced
1/2 garlic cloves, minced
1 teaspoons of minced ginger
1 tablespoon of soy sauce
1 tablespoon of white wine vinegar
1 tablespoon of sugar
2 teaspoons of sesame oil
1 teaspoon of sake or white wine
1 teaspoon of honey or maple syrup
Chili powder, optional

Step 1: Prepare sauce. If you have time, leave it for 30 minutes.

Step 2:  Put salt, pepper and sake on chicken breasts.

Step 3:  Coat them with corn starch.

Step 4: Fry them, make them crunchy.

Chikin No Kuzu Yasai Zuke- Roasted Chicken with Scrap Vegetables

I went back to Japan to spend time with my parents.
I asked my mom if I could be in her cooking class. She said, No you can't. My students pay to be there. Are you going to pay me? If not, it's not fair for others........

She asks me for help to type out her recipes on computer, has never paid me!

I stole her recipes and this is one of them.

It's funny that I know some tricks in cooking that are not explained in her recipes (I believe that she usually explains them verbally in class.) I've never learned cooking from her, but I grew up watching her cooking every single day 3 meals plus snacks.

Ready in: 40 minutes, excluding marinating time

Ingredients for two:
Two to four chicken thighs
200g of vegetable scrap
Salt
[Prepare in Cup]
1/2 cups of Dashi or chicken stock
2 tablespoons of Sake
2 tablespoons of Mirin
2 tablespoons of soy sauce
A few slice of ginger
One clove of garlic, sliced

Required Equipment:
Oven
Vegetable scrap, such as onion skin and bottom, carrot top, and anything you usually throw out
Ziplock

Step 1: Try to make thigh's thickness even.


Step 2: Layer it and put some salt, and mix chicken by hand. Leave it for 10 minutes on counter.


Step 3: Under water, wash salt off.

Step 4: Remove water from chicken. 

Step 5: Put veggie scrap, sauce and chicken in a ziplock to marinate at least 5 hours.

Remove air from the bag

Step 6: Start the oven at 350F.

Step 7: On a baking pan, lay scrap and put a grill on top of it. Place chicken on the grill, put it in the oven for 15 minutes.

Chikin Namban- Battered Chicken in Sour Sauce with Tartar

There is a nation-wide Bento take out store in Japan. This is my favorite bento there. 


Ready in: 15 minutes

Ingredients for two:
2 chicken breasts
1/4 cups of corn starch
1/4 cups of frying oil
[Prepare coating sauce in a pan]
1 tablespoon of sugar
1 tablespoon of soy sauce
1 tablespoon of vinegar
[Tartar]
1 boiled egg, minced
1/4 onions, minced
A handful of parsley or coriander
2 tablespoons of mayonnaise
1 tablespoon of vinegar
Salt and papper

Required Equipment:
Pan
Pot

Step 1: Heat up coating sauce. No need to bring it to boil. Put it aside.

Step 2: Put all ingredients in a bowl, make tartar.


Step 3: Coat chicken with corn starch.

Step 4: Heat up a pan and put oil. Grill chicken. Make it crancy!


Step 5: Dip chicken in the sauce, and coat it well.

Step 6: Place chicken and pour tartar on top.

Asian Chicken

It's hard to name a dish that is so simple! I couldn't think of anything other than Asian Chicken.

My mom usually uses thigh when she cooks chicken. I only buy chicken breast just because it comes in a nice fillet and looks good in a package.

I was at a store and was looking at the chicken section. I noticed that thigh is much cheaper than breast. Did you know?

Why don't I try to cook thigh.

Thigh looks like a broken piece, but it's juicy when you cook it!
Ready in: 10 minutes

Ingredients for two:
Two chicken thighs
1/2 cups of arrowroot powder or corn starch
1/4 cups or less of frying oil (avoid butter if you want to stay in asian flavor)
Sweet and chill sauce

Required Equipment:
Pan

Step 1: Place thigh on a chopping board, and try to make the thickness even.



Step 2: Heat up a pan and put oil into it.

Step 3: Put powder on a plate and put chicken on it to coat. Make sure you cover every surface.

Step 4: Cook chicken till it turns golden and crispy.

Step 5: Serve it with sweet and chill sauce.

Remon To Ninniku Ajino Toriniku- Lemon Garlic Chicken

Perfect for weekday dinner! Marinate it over night.

Ready in: 10 minutes

Ingredients for two:
Some vegetables
<Prepare in a bag>
2 chicken breasts, cut into cubes
 1 teaspoon of salt
2 tablespoons of lemon zest

Step 1: Marinate chicken over night.

Step 2: Fry vegetables in a pan, and cook chicken.
