How to Cook Sushi Rice on Stove

I've never heard "Sushi Rice" before coming to Canada..... Sushi Rice is the only rice I ate in Japan even for "plain rice".

Choose a good price bag of sticky rice, it won't make any difference. I usually use Botan Rice, 13CA$ per 5kg.

Preparing for two:
1 cup of Sushi Rice (For Sushi lover like me, 1 cup per person.)
<Sushi vinegar>
2 tablespoons of rice vinegar
1 tablespoon of sugar
Salt

Step 1: Put 1 cup of Sushi Rice in a pot, and then wash it 3 times with 5 fingers standing up.
<Important>
- Don't wash it too hard. Doing so makes each rice broken.
- Don't worry about unclear water after washing. I was taught that the water contains sweetness.

Step 2: Throw out all the washing water, and then add 1.5 cup of fresh water.

Step 3: Set the stove on maximum heat, place the pot onto it.  

Step 4: After it boiled, immediately lower the heat into lowest heat, and then cover it.  Wait for 15 minutes. You would burn the rice if the heat it not low enough.
<Important>
- Don't open the cover, or stir the rice never ever! Leave it for 15 minutes!

Step 5: Turn the heat off, and mix the cooked rice by inserting a scooper along the pot edge.
<Important>
- Don't leave the pot on the heat more than 15 minutes, otherwise you burn it.
- Try not to squash the rice.

Step 6: Cover it again until serving. 
For Sushi, replace the rice in a bowl. Add Sushi vinegar while the rice is still hot, and then mix it. Cover it with a wet towel.

<Tip> If you burn the pot, put some baking soda in it after emptying the pot. Add fresh water, and then boil it.
