Furutu Keki- Cake with Dried Fruits


Happy Mother's Day! This is my mom's signature cake. We always have this at home.




Ready in: 60 minutes

Ingredients for one loaf:
150g your favorite dried fruits, cut small
2 tablespoons of rum
40-60g sugar, adjust to your sweet preference
2 eggs
100g melted butter or 80g coconut oil
120g flour, shifted, or replace 20g with almond flour or cornmeal
1/2-1 teaspoon of baking powder if you are not sure about puffiness

Required Equipment:
loaf mold
oven
hand mixer, if you have

Step 1: Chop dried fruits and soak them in rum overnight if possible.  


Add 1 tablespoon of flour in and mix it before using it. It prevents it from gathering only at the bottom of the cake. 

Step 2: Set your oven at 320F and start preheat.

Step 3: In dry-clean bowl, put sugar and eggs, mix them in high speed until it's white.


Step 4: Mix melted butter in.


Step 5: Add flour in, and mix.

Step 6: Mix wet-fruits in and mix.

Step 7: Pour the mix in a mold and drop it on the counter a few times to get rid of bubbles from the mold. Splay water on top and put it in the oven for 10 minutes.

Step 8: Open the oven then make a line in the middle of the loaf. Put it back in the oven for another 30 minutes.
